The bpm passes the data set of the method you just fired that trigger the
BPM. There is an instruction set in the files section on how to extract this
data set and be able to use it in your workflow. If you need any help
understanding it let me know I wrote it.
In short no you don't need an input channel, message type, and or message
map.

No message map, input channel or message type is needed. Theoretically
your input schema should be the response schema of the method you're
coming from in your first conversion element (which should be the first
element in your work flow). In your case the input schema would be
custshipservice/UpdateRequest.
Your document tracking cant be seen under inbound messages, you need to
look under all activities/completed activities. Make sure in your work
flow under process properties you set tracing status to required under
the document tracking tab.
If you have trouble with your schema you may have to just pass it
through a conversion straight to a poster out to a file folder. Grab
the xml output and feed it back into your schema utility to generate a
new schema. Sometimes there are some discrepancies between the schema
coming out of the BPM and what the web service schema is. Just be aware
of this possibility.

"informal message" box that I put in my actions, so I know that it is
triggering.
Any ideas?
