We have done this very thing, two times actually.
Once for a test server.
Once for a test E9 upgrade server.
We have all three running the same version of server 2003, with all the updates.
Installed all the epicor and progress monitor tools
Installed Vantage from scratch on each one, following the version and SP upgrade/update paths.
Then after we verified Vantage was working we performed a restore to the db from a recent backup.
Sounds much easier than it really was, but that way we had two, for the most part identical installs of Vantage. The upgrade and version/schema changes were a real pain.
We did not use SQL, so we didn't need to buy another license, at least for that.
We just had to pay attention to port numbers and we setup our clients config file to have the lines in it for the correct server we were using for client testing.
