Would you have any sample code I could look at on how to do this? I've wrote customizations and BPMs, but they have always dealt with modifying existing information, none of them have ever added a new record.

Another option is to customise the order entry screen
Allow the users to enter the ship to address in the Order Entry Screen, then in the background
Use the ShipTo Adapter (which is faster) to create the shipto record and link to the sales order header.
Long Term E9 is the route to go with OTS.

Epicor 9 has a "one time ship to" feature available in OE in addition to the standard ship to's. Also, there is a Drop Ship checkbox at OE and Drop Ship functionality for Purchasing and Shipping/Receiving.
It may be what you need.
