Support has a document on process and sub-process calling maintenance.
I believe this will handle exactly what you are looking to accomplish.

Good Afternoon,

We have added a user checkbox for "inspection required" to the part
maintenance. We have noticed, however ,that we had to assign the
customization to every menu structure that has Part in it (epicor 9),
eg: order mgmt/setup, product config/setup, job mgmt setup, etc.

Is there a way to do a global replace of the standard Part interface
with our customized one, without having to assign it individually
everywhere it is used?

No. The reason for it is that you may want a customization in one place
and not in another and maybe a different customization in a third place.
