You can look at processor comparisons on intels website.
We just purchased two new servers to run V8 (one V8 server and one TS server). I opted for the Intel 5160 Xeon dual core processors. I also purchased 15k rpm disk drives with these servers and 16gb memory. I don't think you can have too much processing power for a V8 server.
I'll be installing these new server next week and can give you an update after installation on performance gains if you'd like.
