The easiest way is to inactive the part with the bad UOM and create a new one, but we have smart part #s so that isn't an option for us. We were given some other workarounds from Epicor - we're also on 607b:
Option #1
1. delete the transaction (e.g. PO Line with the part, picked part)
2. fix the conversion on the part
3. recreate the transaction (e.g. add PO line back on)
Option #2
Use instructions in 34028MPS to move class types - didn't work for us
Option #3
There is an override option that isn't shown on the screen, have to customize the form to put it in list view. This might become a part specific UOM then. I can't find the specific field in the database for this and don't remember where we used it. Technical help on the field: "External field used to enable/disable the conversion factor to able to change it."
Our buyers have also tweaked the UOM conversions/factor directions in the supplier price list to get around this for purchase parts but I'm not a fan of that.
I'm hearing you can change UOMs in 701 - just getting started on the conversion so won't be testing that for a while yet.
