Tony,
Most default values are either in Company or Plant Configuration Maintenance or they are part of the base code, usually with some type of logic applied.
For instance, by default a NEW customer record should be of Type 'Suspect'
From there if a Quote is put on for this customer, the customer type will change to 'Prospect'
Or if a Sales Order is entered for this customer, the customer type will change to 'Customer'
If your installation is not working this way, then you may have a bug.
Outside of these options, your next easiest way to override a default is with a BPM.
