Also you could make direct and create a Job to Job if you don''t want to keep it in stock.

We have a job that has a subassembly added and we want to know if it’s possible to split out the subassembly portion and assign it it’s own job number?

Yes...... make it an inventory item.  For this subassembly untick the pull as box, you can still leave the view as ticked as it will show the BOM related to the now inventory part.  You will now have demand to make or buy this part depending on your part setup.
