You are correct, the machines field is grayed out.

Patrick, the number of machines field is grayed out and not maintainable
when you have a list of machines behind it. It takes the number from the
list. You can add but never remove or reduce. At least that is how it has
worked for us. If I am missing something, please let me know.

I think all you have to do is change in the work center, number of machines
field to the current active number, as for the machine's change the
description to something like "ZZ-Offline" to clue everyone in on the fact
that the machine has been taken "Offline", "Sold", "Unavailable" or whatever
term you want to use.
Kind of interesting that in vantage you have to live with work centers,
machines, parts, inspectors, buyers, etc... the list goes on, but you are
allowed to delete a part revision?
