I don't know what version you are on or if you are still in implementation, but Epicor does have "generic" EUP's in Word as part of the their implementation package for 803 that they should be able to provide to you. I believe they also have a process flow chart for quote to cash. I would try asking your project manager or salesperson if they can get these for you.
