I am in the process of learning how to create BAQ’s.
Can anyone recommend any documentation or online training sources to help learn how to create in depth BAQs?

The user guides to a pretty good job of explaining the basics. You will need access to epic web, but if you read through all of the topics from this link, you’ll have a good start.
BAQ’s are a query tool with some system specific Epicor nuances but I would read any decent online SQL primer, specifically focusing on join types as this will give you a good grounding of what the BAQ’s are actually doing - apologies if I am teaching my grandmother to suck eggs.
The other obvious resource would be the Epicor embedded courses assuming you bought the appropriate licences
